The Hubby brought home a zucchini that came from a co-workers garden. I loved grilled veggies but they can be boring and not very filling. So I got a little creative and here's what I whipped up. Basically a cheesy zucchini bake and I actually just put in the toaster oven so I didn't have to heat up the house.
I've also made this in a cast iron skillet on the grill. Everything's better with cheese, right?

1 medium-large zucchini chopped
chopped onion & green pepper
red pepper flakes
fat free sour cream
low fat mayo
I just eyeballed all the ingredients and mixed in a bowl. Sprayed an oven safe casserole dish and poured it in. I baked it at 400 degrees for about 20-30 minutes. Put some extra cheese on top and broiled it til bubbly.
We had a small salad while this was baking and grilled some mahi that we marinated with bourbon peppercorn marinade.
