White Bean Kale Soup with Chicken Sausage

Hey everyone! If you follow me on my second YouTube Channel, JustMissCrys, then you saw where we recently made this White Bean Kale Soup with Chicken Sausage for dinner. I'd tweak it if we were to make it again, which I'll tell you below.

I first saw this on Instagram. Then I looked up several recipes that were similar and in the end made it my own, as I usually do. Again, since I wasn't really going off a recipe, I had to write my own. This makes a lot of soup! You could either adjust the broth and ingredient amounts for freeze some like we did.

Ingredients

2 15.5 oz cans Cannellini Beans (white kidney), drained, ringed & divided
2 32oz boxes of low sodium Chicken Broth
1 14.5 oz can diced tomatoes, drained
1 bunch Kale, rinsed, torn into small pieces
1 package Chicken Sausage Links (about 5) casings removed, cut into bite sized pieces
1/2 Onion, diced
3 Celery Ribs, diced
1 tsp minsed garlic
Salt and Pepper to taste
2 TBS Olive Oil

Directions

Over medium heat in a large dutch oven or stock pot, add olive oil and lightly brown the sausage turning frequently. Add the garlic, onion and celery and cook until softened.


Next add the Kale. You can see in the picture we used 3 large bunches from the original bunch. You could use the entire bunch but you'll only need the amount shown. Cover and allow the Kale to wilt down.




Add Salt and Pepper to taste. Add in the Chicken Broth. {you can always use less broth and add water if you'd like} Add 1 1/2 cans of the beans and the can of tomatoes. Mash the remaining beans with a fork and add to the mixture for texture and thickness. Simmer on low heat for 1 hour and then it's ready!



Changes I'd Make Next Time

The Hubby suggested using ham instead of sausage next time. We used a brand from Target that had spinach and garlic already in it. It may have been too much. I'm not always a huge sausage lover. It also seemed like a lot. You could always adjust the amount to what you like.

We'd also like more beans, so next time I'd use 3 cans. If you find it doesn't have enough flavor, add more garlic or seasonings to your liking. Again, it seemed fine to us but it could have been because the sausage was so flavorful.

LOVE this new vest I just picked up at Belk! It was $40 originally and I got it on major sale for $16! I've been looking for a bright pink for a while now. It's Jane Ashley brand. I would have listed a link here but they only show three colors on the site. I bought mine in the store. I'm also on the hunt for a navy one. Surprisingly, it's been harder to find than one would think. I just love vests this time of year!

October Ipsy Bag Review

Hi there! Some of you may have noticed that I skipped posting about September's bag. It wasn't good to put it mildly. I did a little picture/rant about it on Instagram. To be honest, that was the first bag that wasn't even worth the $10. I've been pleased for the most part with my other bags. So lets take a look at October.


All bags are slightly different depending on your own beauty profile you fill out on the site. Some items are the same brand but colors will vary. The monthly subscription is $10. 

Here's what my bag had in it:
1. Buxom Lip Polish - Dolly - .07 ml kit size/generous sample $9.00
2. be Delectable by Cake Beauty Hand Cream - Strawberry & Cream - 2 fl oz $5.00
3. Zoya Nail Polish - Mason - Full Size $8.00
4. Big Sexy Hair Blow Dry Volumizing Gel - 1.7 fl oz generous sample/travel size $5.00
5. Face Oasis H2O+ Hydrating Treatment - .34 fl oz $15.00
Total = $42.00

I couldn't find the H2O product in the size for sale by itself. I'm guessing at that price based off the full sized price and some of the kit pricing. Just the nail polish alone makes this bag worth the price. 





I'm looking forward to using ALL of these products! I already love the Big Sexy Hair brand and you can't beat Zoya and Buxom either. The hand cream smelled amazing! The hydrating treatment had great reviews on Ulta's website so I'm looking forward to trying it as well. Overall, a great bag this month. What did you get in yours?

CoverGirl Crushed Berries


Hi Everyone! Need some Fall Polish inspiration? Well I've got one for you! Crushed Berries is a beautiful deep berry cream shade. It was just what I was looking for that day I picked it up. Surprisingly, I didn't have anything close to it in my collection. This one is a staple for any time of year, really.

Like all of the CoverGirl polishes from the regular line, this one applies beautifully and opaque in two coats. If you haven't tried any of these yet, you are truly missing out!

CoverGirl The Hunger Games Catching Fire Scalding Emerald


Hi everyone! This is the third and last polish of the three I picked up from this collection. If you'd like to see the first two, you can see them here.  Violet Flicker and Black Heat 

This was another disappointment. So if you're following along, two out of the three were duds. However, Scalding Emerald would make a great glitter topcoat! It's a little shear for my taste on its own. I decided to show you what one and two coats looks like on the same hand. The first two nails are with one coat, the others with two coats.

In certain lighting, it takes on a green/brown/purple duo-chrome look. Very cool as I said for a topcoat. It's more of a micro-glitter, which is pretty. The base just isn't opaque enough. Have you tried any from this line?

CoverGirl The Hunger Games Catching Fire Black Heat




Hello there! This is the second polish that I'm trying from the new collection. If you'd like to see swatches of the first, please view this post.

Black Heat did not disappoint! Went on smoothly and opaque in two coats. It's a black base with green and gold micro glitter. It can almost look green/black in certain lighting. I really like this one! Not my best polish job by far, but you get the color all the same. ;)
